Meng in een grote kom 1 el olijfolie met wat peper en zout. Voeg alle groenten toe aan de kom en meng goed met het oliemengsel. Leg de groenten op een bakplaat met bakpapier en rooster ze 10 - 15 minuten in de oven.

Snijd de krulpeterselie en oregano zeer fijn en voeg toe aan een kleine kom. Meng de kruiden in de kom met de olijfolie met citroen en 2 tl zwarte balsamicoazijn. Pers de knoflook en voeg toe aan de kom. Breng op smaak met peper en zout.

Leg de groenten op een serveerschaal. Verdeel de kruidenolie erover.
