Cooking Steps

  • Line a 10x20 cm oven dish with parchment paper. 
  • Boil a shallow layer of water in a saucepan, then place a heat-resistant bowl on top, ensuring it does not touch the water. 
  • Add the white chocolate chips, powdered sugar and peanut butter and melt while stirring. 
  • Pour the mixture into the oven dish and cool to room temperature. Then, place the pan into the freezer for about 1 hour.

  • Boil a shallow layer of water in a saucepan, then place a heat-resistant bowl on top, ensuring it does not touch the water. 
  • Add the chocolate chips and allow to melt while stirring. 
  • Meanwhile, roughly chop the salted almonds.
  • Peel the mandarin and pull apart the segments.

  • Transfer two-thirds of the chocolate to a parchment-lined baking sheet and spread out into an even layer. 
  • Scatter the almonds and raisins on top of the chocolate. 
  • Dip half of each mandarin segment into the rest of the chocolate and transfer to a plate. 
  • Transfer the chocolate bark and mandarin segments to the refrigerator and chill for at least one hour.

  • Remove the white chocolate fudge from the freezer 5 minutes before serving. Cut into smaller cubes. 
  • Remove the chocolate bark from the refrigerator 5 minutes before serving and roughly cut it into smaller pieces. 
  • Transfer the fudge, chocolate bark and mandarin segments to a serving plate.
