Cooking Steps

Snijd de peen in blokjes.

Bereid de bouillon. Snipper de ui. Snijd de pruimtomaat klein en snijd de peen in blokjes.

Verhit de olijfolie in een wok of hapjespan met deksel en fruit de ui 2 minuten op laag vuur. Voeg de peen toe en roerbak 5 minuten.

Kook ondertussen 750 ml water per persoon in een pan met deksel voor de ravioli.

Voeg de helft van de provolone toe.

Voeg de tomatenpuree toe aan de wok of hapjespan en bak 1 minuut mee. Voeg vervolgens de tomaat, rozemarijn en bouillon toe en kook 5 minuten op laag vuur. Voeg na 4 minuten de zwarte balsamicoazijn toe. Breng op smaak met peper en zout en voeg de helft van de provolone toe aan de saus.

Kook de ravioli.

Kook ondertussen de ravioli, afgedekt, 2 - 3 minuten.

Verdeel de ravioli en de saus over de borden.

Verdeel de ravioli en de saus over de borden. Garneer met de overige provolone en voeg naar smaak extra vierge olijfolie toe.
