Voorbereiden

Breng ruim water aan de kook in een pan met deksel voor de aardappelen. Verkruimel het groentebouillonblokje erboven. Breng in een tweede pan met deksel water aan de kook voor de spruitjes. Was of schil de aardappelen en snijd ze in grove stukken.

Kook de aardappelen 15 – 18 minuten, afgedekt, in de pan met bouillon. Kook de spruitjes in 6 – 8 minuten beetgaar in de andere pan. Giet de spruiten af en spoel af met koud water. Kook de laatste 5 minuten de rookworst en de mix van wortel en ui mee met de aardappelen. Bewaar de rookworst apart. Giet daarna af en bewaar een beetje kookvocht.

Tip: Spruitjes zijn rijk aan calcium voor sterkte botten en tanden, ijzer voor je energieniveau, vitamine E voor een sterk immuunsysteem en vezels voor gezonde darmen.

Bakken

Verhit 1/2 el roomboter per persoon in een koekenpan op middelhoog vuur. Bak de spekblokjes in 2 - 3 minuten krokant. Haal de spekjes uit de pan en bewaar apart. Maak een jus en voeg 2 - 3 el water per persoon toe aan de koekenpan met boter. Verkruimel 1/4 runderbouillonblokje per persoon erboven. Roer goed en kook 2 - 3 minuten in tot een jus. Voeg vervolgens de spruitjes en spekblokjes toe aan een tweede koekenpan bak 4 - 6 minuten. Blus af met 1/2 el witte balsamicoazijn per persoon en verhit nog 1 minuut.

Serveren

Stamp met een aardappelstamper de aardappelen en wortel tot een grove stamppot. Voeg per persoon: 1/2 el boter, 1 tl mosterd en een scheutje melk toe om het smeuïg te maken. Verdeel de hutspot en spruitjes over de borden. Leg de rookworst ernaast en schenk de jus erover.
