Cooking Steps

  • Preheat the oven to 200°C.
  • Tear the mozzarella into pieces and slice the tomato. 
  • Chop the basil.

  • Place the baguette on a parchment-lined baking sheet and bake 6 minutes in the oven. 
  • In the meantime, transfer half a tbsp of extra virgin olive oil and 1 tsp white wine vinegar to a salad bowl. 
  • Add the salad leaves and mix well. Season with salt and pepper to taste.

  • Cut the baguette open and spread with the green pesto. 
  • Top with the salad, tomato, mozzarella and basil. 
  • Garnish with the Crema di balsamico and half a tbsp of extra vierge olive oil. 
  • Season with salt and pepper to taste.

  • In the meantime, heat the tomato soup in a soup pan over medium-high heat. 
  • Serve the tomato soup in deep plates with the baguette caprese on the side.
