Groenten snijden

Kook 500 ml water per persoon in een pan met deksel. Snipper de ui en pers de knoflook of snijd fijn. Halveer de rode cherrytomaten. Halveer de courgette in de lengte en snijd vervolgens in dunne halve plakken.

Tip: Wist je dat cherrytomaten meer bètacaroteen bevatten dan gewone tomaten? Bètacaroteen is een antioxidant dat het lichaam beschermt tegen weefselschade en veroudering.

Groenten bakken

Kook de farfalle, afgedekt, 11 - 13 minuten. Giet daarna af en laat zonder deksel uitstomen. Verhit ondertussen de olijfolie in een wok of hapjespan met deksel. Voeg de ui en knoflook toe en fruit 2 minuten op middelhoog vuur. Voeg de courgette, de cherrytomaten en 1 tl paprikapoeder per persoon toe en bak 4 minuten.

Saus afmaken

Voeg het kipgehakt toe aan de pan met groenten en bak in 5 minuten los op middelhoog vuur. Voeg daarna de kookroom toe en verwarm nog 2 minuten. Breng op smaak met peper en zout.

Serveren

Verdeel de pasta over de borden. Schep de saus met groenten en kipgehakt erover. Garneer met de geraspte kaas.
