Cooking Steps

Voorbereiden

  • Verwarm de oven voor op 180 graden.
  • Rasp de wortel (zie TIP).
  • Vet een rechthoekig cakeblik met een lengte van 25 cm in of bekleed met bakpapier.

Tip: Heb je een keukenmachine? Dan kan je de wortel ook in een keukenmachine grof 'raspen'.

Beslag mixen

  • Giet de cakemix in een grote kom.
  • Voeg 160 ml koud water en 160 ml zonnebloemolie toe en mix met een (hand)mixer of garde tot een egaal beslag.
Cakevulling toevoegen

  • Voeg de geraspte wortel, rozijnen en de helft van het zakje kaneel toe aan het beslag en meng goed.
  • Giet het beslag vervolgens in de cakevorm. Bak de cake 50 - 55 min in de oven.
  • Pers intussen een halve citroen uit in een kleine kom. Meng de roomkaas door het citroensap, voeg 4 el poedersuiker (zie TIP) toe en klop met een vork tot een luchtige massa.

Tip: Heb je geen poedersuiker in huis? Vervang het dan door 2 el suiker of 2 el honing.

  • Controleer na 55 minuten of de cake klaar is door er met een satéprikker in te prikken. Komt hij er schoon uit? Dan is de cake klaar. Haal hem uit de oven en laat de cake volledig afkoelen.
  • Besmeer de bovenkant met de creamcheese en snijd de cake in plakken.
