Cooking Steps

Prepare

  • Preheat the oven to 200°C. Boil plenty of water in a pot or saucepan for the cauliflower.
  • Cut the head of the cauliflower into florets and dice the stem. Slice the onion into half rings.
  • Parboil the cauliflower for 6 - 8 minutes, then use a slotted spoon to remove from the pot and set aside. 
  • Meanwhile, peel or thoroughly wash the potatoes and cut into rough chunks.
Fry the onion

  • Melt a knob of butter in a deep frying pan over medium heat and fry the onion for 5 - 7 minutes until evenly browned.
  • Add the curry powder and the mustard seed and fry for 1 - 2 more minutes.
  • Meanwhile, finely chop the parsley and transfer to a bowl.
  • Add the panko and a third of the cheese, then mix well to combine.
Boil the potatoes

  • Bring the water back up to the boil. Cook the potatoes for 12 - 15 minutes until done, covered.
  • To the onion, add the cream and the rest of the cheese, then season generously with salt and pepper.
  • Cook gently for 2 - 3 minutes, then stir in the cauflower and cook for 1 - 2 more minutes. 
  • Transfer to an oven dish and top with the panko mixture, then bake in the oven for 15 - 20 minutes.
Serve

  • Melt a knob of butter in a frying pan over medium-high heat. Fry the burger for 3 - 5 minutes per side, or until done.
  • Mash the potatoes with a splash of milk, then stir in the mustard. Season to taste with salt and pepper.
  • Serve the mashed potatoes on plates with the cauliflower gratin and the burger alongside.
