Cooking Steps

  • Preheat the oven to 180 degrees.
  • Dice the bell pepper. Chop the onion into half rings. 
  • Chop the chicken sausages into 3 pieces, so you have 6 pieces per person.

  • Heat 1/2 tbsp of olive oil in a frying pan on medium heat and bake the chicken sausages, onion and bell pepper  with half of the Peruvian spice mix for 5-6 minutes.
  • In the meantime zest the lime and then juice the lime into a small bowl. Finely chop the parsley.
  • In a bowl beat the eggs and add the rest of the Peruvian spice mix,  half of the parsley and 1 tsp of lime zest per person.

  • Line an ovendish (see Tip) with parchement and then line with the tortilla's, making a tortilla quiche base.
  • Divide the sausages, bell pepper and onion over the tortilla's and pour the eggs over. 
  • Top with the cheese and cover with aluminium foil. Bake for 10 minutes in the oven, take of the aluminium foil and bake for another 10 minutes.

  • While the tortilla quiche is baking, dice the tomato.
  • In a bowl mix 1/2 tablespoon of lime juice and 1/2 tablespoon of olive oil. Add the tomato and the rest of the parsley, season with salt and pepper.
  • Cut the tortilla quiche and serve with the tomato salsa.
