Cooking Steps

Couscous koken

  • Bereid de bouillon in een pan met deksel voor de couscous.
  • Haal de pan van het vuur en voeg de couscous toe.
  • Dek de pan af en laat 10 minuten staan.
  • Roer de couscous los met een vork.
Amandelen roosteren

  • Snipper de ui.
  • Verhit 1/2 el zonnebloemolie per persoon in een wok of hapjespan op middelhoog vuur en bak de ui 1 - 2 minuten.
  • Voeg het gehakt toe en bak in 3 - 4 minuten los.
  • Verhit ondertussen een wok of hapjespan zonder olie op hoog vuur en rooster het amandelschaafsel goudbruin. Haal uit de pan en bewaar apart.
Spitskool bereiden

  • Snijd de spitskool in twee grote parten per persoon.
  • Verhit 1/2 el zonnebloemolie per persoon in dezelfde pan op hoog vuur. Bak de spitskool in 1 - 2 minuten per kant mooi bruin. Voeg vervolgens de aangegeven hoeveelheid water toe.
  • Dek de pan af en laat 3 - 4 minuten stomen.
Serveren

  • Snijd de verse kruiden fijn. Snijd de citroen in partjes.
  • Roer de couscous door het gehakt en besprenkel met extra vierge olijfolie naar smaak.
  • Verdeel de couscous over de borden en leg de spitskool erbovenop.
  • Besprenkel met de harissa en de yoghurtdressing. Garneer met de verse kruiden en het amandelschaafsel. Serveer met de citroenpartjes.
