Cooking Steps

Voorbereiden

  • Breng ruim water met een snuf zout aan de kook in een grote pan met deksel voor de penne, sperziebonen en de eieren.
  • Verwijder de steelaanzet van de sperziebonen en snijd in 2 gelijke stukken.
  • Kook de penne samen met de eieren, afgedekt, 10 - 12 minuten.
  • Voeg na 4 - 6 minuten de sperziebonen toe. Giet af, spoel af onder koud water en laat zonder deksel uitstomen.

  • Halveer de cherrytomaten en snijd de verse bladpeterselie fijn.
  • Pers de knoflook of snijd fijn. Snipper de kleine rode ui en snijd de olijven doormidden.
  • Pers de helft van de limoen uit en snijd de andere helft in partjes.
Mengen

  • Meng in een saladekom per persoon: 1 el extra vierge olijfolie, 1/2 tl mosterd en 1/2 el limoensap. Voeg de tonijn, de olie van de tonijn, de bladpeterselie, rode ui, knoflook, cherrytomaten, olijven, peper en zout toe. Meng alles door elkaar.
  • Pel de eieren en snijd in partjes.
  • Voeg de penne en sperziebonen toe aan de saladekom en meng goed.
Serveren

  • Serveer de pasta niçoise met de gekookte eipartjes en 1 limoenpartje per persoon.
  • Voeg extra vierge olijfolie, peper en zout toe naar smaak.

Weetje: Cherrytomaten mogen dan klein zijn, ze hebben wel een hoger vitaminegehalte dan de gewone tomaat. Zoals het antioxidant bètacaroteen dat het lichaam beschermt tegen weefselschade en veroudering.
