Wash the baby potatoes and cut them in half. Heat a drizzle of sunflower oil in a deep frying pan over medium-high heat. Fry the potatoes for 15 minutes, covered, then remove the lid. Season with salt and pepper, then fry for 5 - 10 more minutes (see Tip).
Tip: this recipe is high in calories. If you're watching your calorie intake, serve the sandwich without the potatoes and save them for another recipe.
Slice the onion into half rings. Core the apple and cut it into matchsticks. Set aside several lettuce leaves for the burger, then finely chop the rest for the salad.
Melt a small knob of butter in a frying pan over medium-high heat and fry the onion for 6 - 8 minutes. Deglaze with the balsamic vinegar and the sugar, then mix well and fry for 2 - 3 more minutes.

In a salad bowl, combine the mayonnaise with the white wine vinegar and season to taste with salt and pepper. Add the chopped lettuce, then toss well to combine with the dressing.
Melt a small knob of butter in another frying pan over medium-high heat. When the pan is nice and hot, fry the burger for 3 - 4 minutes per side or until golden-brown.
Cut open the brioche bun and top with the burger. Serve all the elements in separate bowls: the reserved lettuce leaves, the caramelised onion, the apple and the honey-mustard sauce. Allow everyone to build their own burger and salad as preferred. Serve the potatoes alongside.
