Voor deze aardappelschotel hoef je de aardappelen niet te schillen. De schil zorgt voor extra smaak en zo bespaar je ook nog eens tijd. De rode pesto en provolone geven het gerecht een volle smaak en met de knapperige hazelnoten maak je het geheel helemaal af.

Cooking Steps

Aardappelen koken

Kook 250 ml water per persoon in een pan met deksel voor de aardappelen. Was de aardappelen grondig en snijd in parten. Kook de aardappelen, afgedekt, 10 minuten. Giet daarna af en laat zonder deksel uitstomen.

Groenten bakken

Verhit ondertussen de olijfolie in een wok of hapjespan en roerbak de Italiaanse groentemix met de oregano 3 - 4 minuten op middelhoog vuur.

Aardappelen bakken

Voeg de aardappelen toe en roerbak nog 5 minuten mee.

Op smaak brengen

Voeg daarna de rode pesto en de helft van de provolone-flakes toe en roer totdat de kaas gesmolten is. Breng op smaak met peper en zout.

Noten hakken

Hak ondertussen de hazelnoten grof.

Serveren

Verdeel de aardappelschotel over de borden, bestrooi met de overige provolone flakes en garneer met de hazelnoten.
