Cooking Steps

Prepare

  • Prepare the stock.
  • Peel the potatoes and cut into smaller pieces. Dice the carrot.
  • Heat the olive oil in a soup pot or large pot over medium-high heat. Fry the pumpkin, potatoes, carrot and thyme for 3 - 4 minutes, seasoning with salt and pepper.
  • Add the stock, passata and two thirds of the cream, then cover with the lid and bring to the boil. Lower the heat and cook gently for 20 - 25 minutes.
Make the 'spider' meatballs

  • Boil plenty of salted water in a pot or saucepan.
  • In a bowl, combine the mince with the panko and season with salt and pepper.
  • Knead well to combine, then shape the mince into eight small meatballs per person. 
  • Snap the spaghetti in half, then stick four pieces of spaghetti into each meatball so as to make the spider legs!
Finish the soup

  • Boil the 'spider' meatballs for 8 - 10 minutes, then remove from the pan and set aside.
  • Transfer 50ml per person of the cooking liquid to the soup, then remove from the heat.
  • Use an immersion blender to process into a smooth soup. Season to taste with a generous amount of salt and pepper.
  • If the soup is still too thick, blend in an extra splash of the cooking liquid.
Serve

  • Serve the soup in bowls or deep plates.
  • Use the rest of the cream to make a cobweb on the surface of the soup.
  • Top with the 'spider' meatballs and enjoy your spooky soup!
