Cooking Steps

Voorbereiden

Verwarm de oven voor op 210 graden. Snijd de rode ui in halve ringen. Snijd de peer in kwarten en verwijder het klokhuis. Snijd dan in de lengte in dunne plakjes. Meng de pompoenblokjes in een kom met 1/2 el olijfolie per persoon, peper en zout. Verspreid ze vervolgens over een bakplaat met bakpapier en rooster 20 - 25 minuten in de oven.

Flammkuchen maken

Leg de flammkuchen op een andere bakplaat met bakpapier. Verspreid 3/4 van de crème fraîche over de flammkuchen. Breng goed op smaak met peper en zout. Beleg eerst met het ontbijtspek, vervolgens de rode ui en dan de peer. Verkruimel de fourme d'Ambert over de flammkuchen en bak 15 - 20 minuten in de oven. Voeg de laatste 5 minuten de walnootstukjes toe.

Tip: Houd je van zoet? Besprenkel de flammkuchen dan met wat honing wanneer je de walnootstukjes toevoegt.

Dressing maken

Rasp de schil van de citroen met een fijne rasp en pers de citroen uit. Meng in een saladekom per persoon: 1/2 el citroensap, 1/4 tl citroenrasp, 1 el extra vierge olijfolie, de overige crème fraîche en de uienchutney. Breng op smaak met peper en zout.

Roodlof snijden

Verwijder de harde onderkant van de stronken roodlof en snijd het roodlof in de lengte doormidden. Verwijder de harde kern en snijd het roodlof in dunne reepjes.

Salade maken

Meng het roodlof met de dressing in de saladekom. Voeg vlak voor serveren de pompoenblokjes toe en 3/4 van de rucola. Schep goed om.

Serveren

Verdeel de overige rucola over de flammkuchen en snijd in stukken. Serveer met de pompoen-roodlofsalade.
