Cooking Steps

  • Preheat the oven to 200°C.
  • Cut the sweet potatoes into 1 cm cubes.
  • Transfer the sweet potatoes to one side of a parchment-lined baking sheet, drizzle with olive oil and add the Potato seasoning, salt and pepper. Mix well then roast in the oven for 20 – 25 minutes.
  • Transfer the pumpkin seeds to a small oven dish and toast them in the oven for 3 – 5 minutes.

  • Meanwhile, season the chicken with salt and pepper.
  • Heat a drizzle of olive oil in a large frying pan over medium-high heat and sear the chicken for 1 - 2 minutes per side. 
  • Remove the chicken from the pan and transfer it to the baking sheet next to the sweet potatoes. Season with the ground paprika and roast for 10 - 12 minutes, or until the meat is no longer pink inside.

  • Meanwhile, cut the head of the broccoli into florets and dice the stem.
  • Finely chop the onion.
  • Heat a drizzle of olive oil in the same large frying pan over medium-high heat and sauté the broccoli for 5 - 6 minutes.
  • Deglaze with 50 ml of water per person and simmer for 3 - 5 minutes, covered with a lid, or until the broccoli is tender. Drain if necessary and season with salt and pepper.

  • Zest the lemon, then cut it into 6 wedges.
  • Finely chop the parsley. Roughly chop the pumpkin seeds. 
  • In a small bowl, make a gremolata by combining the parsley with the juice of 1 lemon wedge per person, the pumpkin seeds, a drizzle of olive oil and lemon zest to taste. Season with salt and pepper.
  • Arrange broccoli, sweet potatoes and chicken on plates. For the adults: serve with the yogurt and gremolata.
