Bloemkool snijden
1

Verwarm de oven voor op 200 graden. Snijd de bloem van de bloemkool in zeer kleine roosjes en de steel in stukjes. Verhit 1/2 el olijfolie per persoon in een grote hapjespan met deksel. Voeg 1/3 zakje Mexicaanse kruiden per persoon en een snuf zout toe en bak 2 minuten.

Tip: Doordat je weinig olie en droge kruiden gebruikt, kan de bloemkool sneller aanbranden. Gebruik daarom een pan met goede anti-aanbaklaag en roer regelmatig.

Voeg de gesneden bloemkool en 3 el water per persoon toe aan de hapjespan en laat, afgedekt, 12 - 16 minuten zachtjes stoven. Haal het deksel van de pan en bak de bloemkool daarna nog 5 minuten. Breng op smaak met peper en zout.

Zoetzure rodekool maken

Meng in een kom per persoon: 1 1/2 el wittewijnazijn, 3/4 tl suiker en een snuf zout. Voeg de rodekool toe, schep om en laat intrekken tot serveren.

Tortilla's verwarmen

Verpak de bruine tortilla's samen in aluminiumfolie en verwarm 5 minuten in de oven.

Tip: Wist je dat deze maaltijd de helft van de ADH vezels bevat? Er zit namelijk 300 gram groente in elke portie, verpakt in vezelrijke tortilla's!

Avocado snijden

Halveer de avocado, draai de twee helften uit elkaar en verwijder de pit. Snijd het vruchtvlees in dunne plakjes en haal ze met een lepel uit de schil. Hak de pikante honingpinda's grof.

Vul de tortilla's met zoetzure rodekool, bloemkool en avocado. Garneer met de pinda's en de labne en rol de tortilla's op.

Tip: Heb je nog groenten over? Meng ze en schep ze naast de tortilla op het bord.
