Cooking Steps

Prepare

  • Preheat the oven to 210°C.
  • Wash or peel the potatoes and cut them into wedges (see Tip).
  • Transfer the wedges to a bowl and drizzle with olive oil.
  • Season with salt and pepper, then toss well to coat.

Health Tip: this recipe is high in calories. If you're watching your calorie intake, serve the burger without the potatoes. You can keep them to use another time.

  • Transfer the wedges to a parchment-lined baking sheet. Bake in the oven for 30 - 40 minutes or until done, tossing halfway.
  • Bake the carrot bun alongside during the final 4 - 6 minutes of cooking time.
  • Meanwhile, thinly slice the cucumber and tomato. Slice the onion into half rings.
Make the dressing

  • Melt a knob of butter in a frying pan over medium-high heat. Fry the burger with the onion for 3 - 4 minutes per side, then remove from the heat and set aside to keep warm until serving.
  • In a salad bowl, combine the honey with the mustard, white wine vinegar and mayonnaise.
  • Add the lettuce and toss well to combine. Season to taste with salt and pepper.

  • Cut open the carrot bun, then top with the burger and its cooking juices.
  • Serve all of the elements separately at the table; the tomato, cucumber, potato wedges, piccalilli, fried onion and lettuce. Serve some mayonnaise alongside as preferred.
  • Allow everyone to build their own burger and salad.
