- Preheat the oven to 220°C. Zest and cut the lime into wedges.
- In a bowl, combine the Copacabana-style spice mix, mustard, half of the lime zest, half of the smoked paprika, a drizzle of sunflower oil and the juice of 1 lime wedge per person.
- Add the chicken wings and toss well to coat.
- Set aside to marinate.
- Peel or thoroughly wash the potatoes and then cut them into chunks.
- Quarter the onion.
- Transfer to a bowl and drizzle with sunflower oil.
- Season the potatoes and onion with the piri piri seasoning* and the rest of the smoked paprika. Toss well to coat.
*Take care, this ingredient is spicy! Use as preferred.
- Transfer the chicken wings to one side parchment-lined baking sheet and the potatoes to the other side.
- Roast in the oven for 30 - 35 minutes, or until the potatoes are golden brown and the chicken wings are cooked through, tossing halfway.
- Cut the apple into thin slices.
- In a large salad bowl, mix together the mayonnaise, red wine vinegar, apple, the rest of the lime zest and the rainbow slaw mix.
- Toss wel to combine and season with salt and pepper to taste.
- Crush or mince the garlic.
- In a small bowl, mix the mango chutney with the garlic and sweet chilli sauce.
- Serve the roasted chicken wings and onion potatoes on plates.
- Serve with the coleslaw, mango-chili dip and the lime wedges on the side.
