Cooking Steps

  • Preheat the oven to 210°C and boil water in a pot or saucepan.
  • Halve the Brussels sprouts and parboil them for 2 - 3 minutes, then drain. Keep the water in the pan for the potatoes. 
  • Transfer the sprouts to a parchment-lined baking sheet and drizzle with olive oil. Season with salt and pepper, then roast in the oven for 12 - 15 minutes.

  • Peel the potatoes and then cut into chunks, then boil the potatoes for 12 - 15 minutes. Drain and return to the pot.
  • Chop the fresh herbs.
  • Mash the potatoes with a knob of butter and a splash of milk liquid as preferred. Stir in the mustard, fresh herbs and Italian seasoning and season to taste with salt and pepper.

  • Meanwhile, season the chicken breast with salt and pepper to taste, then wrap in bacon.
  • Melt a knob of butter in a frying pan over medium-high heat and fry the chicken breast for 2 minutes per side. Reduce the heat and fry for a further 4 minutes per side or until done.
  • Chop the onion. 
  • Heat a drizzle of olive oil in a deep frying pan over medium heat. Fry the onion for 5 - 7 minutes, then deglaze with the balsamic vinegar and stir in the honey. Season with salt and pepper.

  • Transfer the sprouts to the deep frying pan and miw with the caramelized onions.
  • Serve the mash on plates.
  • Top with the sprouts and garnish with the Grana Padano. Serve with the bacon-wrapped chicken.
