- Peel or thoroughly wash the potatoes and then cut them into rough pieces.
- Transfer to a pot or saucepan and cover with the water (see pantry for amount).
- Add a pinch of salt and cover with the lid, then bring to the boil and allow to cook gently for 12 - 14 minutes.
- Drain and return to the pot, then add half of the butter and fry for 2 - 3 minutes over medium-high heat.
- Boil plenty of salted water in a pot or saucepan.
- Cut the head of the broccoli into florets and dice the stem.
- Boil the broccoli for 5 - 7 minutes, then drain and set aside.
- Finely chop the onion in the meantime.
Did you know... broccoli is considered a superfood, and for good reason - not only is it high in vitamins B, C and E, it's also a great source of calcium, potassium and iron.
- Melt the rest of the butter in a frying pan over medium-high heat (or use multiple pans as necessary if cooking for more people).
- When the butter is nice and hot, fry the chicken burger for 4 - 6 minutes or until done, turning regularly.
- In a salad bowl, combine the potatoes with the mayonnaise, mustard, onion and pickles. Season to taste with salt and pepper.
- Drizzle the broccoli with extra virgin olive oil as preferred, then add the gomashio-herb mix and season to taste with salt and pepper. Mix well to combine.
- Serve the chicken burger with the broccoli and the potato salad alongside.
