Cooking Steps

Rijst koken

  • Pers de knoflook of snijd fijn.
  • Verhit 1/2 el roomboter per persoon in een pan op middelhoog vuur en fruit de knoflook 1 - 2 minuten.
  • Voeg de rijst en 180 ml kokend water per persoon toe. Verkruimel ¼ bouillonblokje per persoon boven de pan en breng aan de kook. Zet het vuur lager en kook de rijst, afgedekt, 10 minuten.
  • Haal vervolgens de pan van het vuur en laat, afgedekt, 10 minuten staan.
Vis bakken

  • Dep de heekfilet droog met keukenpapier en wrijf in met de BBQ-rub (let op: pittig! Gebruik naar smaak), peper en zout.
  • Verhit 1/2 el roomboter per persoon in een koekenpan en bak de heekfilet 2 - 3 minuten per kant op middelhoog vuur.
  • Laat ondertussen de mais uitlekken.
Salsa maken

  • Snipper de ui en snijd de tomaat in blokjes.
  • Snijd de verse bladpeterselie fijn.
  • Meng in een kom per persoon: 1/4 el extra vierge olijfolie, 1 tl wittewijnazijn. Breng op smaak met peper en zout.
  • Voeg de ui, de tomaat, de mais en de bladpeterselie toe en meng goed door.

  • Verdeel de rijst over kommen.
  • Leg de heekfilet op de rijst en verdeel de maissalsa erover.
  • Garneer met de avocadodip.
