In Bologna eten ze hun geliefde saus met tagliatelle, maar de volkoren spaghetti die je er vandaag bij maakt, is een stuk voedzamer. Nog een verschil: in plaats van rundergehakt of half-om-half gebruik je in dit recept kipgehakt, dat al op smaak is gebracht met Italiaanse kruiden.

Kook ruim water in een pan met deksel voor de spaghetti integrale.

Groenten snijden

Snipper de ui en pers of snijd de knoflook fijn. Verwijder de zaadlijsten van de groene paprika en snijd de paprika in blokjes. Snijd de tomaten in blokjes.

Kipgehakt bakken

Verhit de olijfolie in een wok of hapjespan met deksel en bak het kipgehakt met de ui en knoflook in 5 minuten los op middelhoog vuur.

Saus bereiden

Voeg de tomatenpuree toe aan de wok of hapjespan en bak 2 minuten. Voeg vervolgens de paprika, tomaat, zwarte balsamicoazijn, suiker en 25 ml water per persoon toe. Breng op smaak met peper en zout en kook de tomatensaus, afgedekt, 10 minuten op middelmatig vuur.

Op smaak brengen

Kook ondertussen de spaghetti, afgedekt, 10 – 12 minuten in de pan met deksel. Giet daarna af en voeg toe aan de pan met tomatensaus. Breng op smaak met peper en zout.

Verdeel de spaghetti bolognese over de borden en garneer met de belegen kaas.
