Due to the different suppliers we purchase our products from, nutritional facts per meal can vary from the website to what is received in the delivered box, depending on your region.
- Boil plenty of water in a pot or saucepan and crumble in the stock cube (see pantry for amount).
- Cook the noodles for 5 minutes, or until al dente, then drain and rinse under cold water. Set aside until further use.
- In the meantime, dice the bell pepper and quarter the lime.
- Finely chop the scallions, separating the white part from the greens.
- Heat a generous drizzle of sunflower oil in a deep frying pan over medium-high heat. Fry the white part of the scallions with the bell pepper for 4 - 5 minutes.
- In the meantime, grate the carrot and crush or mince the garlic.
- Add the garlic, carrot and mince to the pan and fry for 3 minutes over high heat, separating the mince as you do so.
- To the pan, add the red wine vinegar, honey, hoisin sauce, coconut milk, peanut butter and soy sauce (see Tip). Mix well and continue cooking for 3 - 4 minutes.
- Add sambal and lime juice as preferred, setting aside any remaining lime wedges to use as a garnish later.
- Season to taste with salt and pepper.
Health Tip: if you're watching your salt intake, use just half of the soy sauce and then add more later as preferred when serving.
- Transfer the noodles to the frying pan and toss well to combine with the sauce.
- Serve the noodles on plates.
- Garnish with the scallion greens and any reserved lime wedges.
