Cooking Steps

Prepare

  • Boil plenty of water in a pot or saucepan and crumble in the stock cube (see pantry for amount).
  • Cook the noodles for 5 minutes, or until al dente, then drain and rinse under cold water. Set aside until further use.
  • In the meantime, dice the bell pepper and quarter the lime.
  • Finely chop the scallions, separating the white part from the greens.
Fry the vegetables

  • Heat a generous drizzle of sunflower oil in a deep frying pan over medium-high heat. Fry the white part of the scallions with the bell pepper for 4 - 5 minutes. 
  • In the meantime, grate the carrot and crush or mince the garlic.
  • Add the garlic, carrot and mince to the pan and fry for 3 minutes over high heat, separating the mince as you do so.
Make the sauce

  • To the pan, add the red wine vinegar, honey, hoisin sauce, coconut milk, peanut butter and soy sauce (see Tip). Mix well and continue cooking for 3 - 4 minutes.
  • Add sambal and lime juice as preferred, setting aside any remaining lime wedges to use as a garnish later.
  • Season to taste with salt and pepper.

Health Tip: if you're watching your salt intake, use just half of the soy sauce and then add more later as preferred when serving.

  • Transfer the noodles to the frying pan and toss well to combine with the sauce.
  • Serve the noodles on plates.
  • Garnish with the scallion greens and any reserved lime wedges.
