Cooking Steps

Voorbereiden

Verwarm de oven voor op 210 graden. Snipper de helft van de rode ui en snijd het overige deel in halve ringen.

Tomaten bakken

Snijd de pruimtomaten in de breedte doormidden. Leg ze in een ovenschaal met de snijkant naar boven en strooi de gesnipperde rode ui bovenop. Besprenkel met per persoon 1/2 el olijfolie en 1/2 el zwarte balsamicoazijn per persoon en bestrooi met peper en zout. Bak ze 12-15 min in de oven.

Kip bakken

Verhit de roomboter in een koekenpan op middelhoog vuur. Bak de uienringen 1 – 2 minuten. Voeg de kippendijreepjes toe en bak ze samen met de ui in 6 – 7 minuten gaar.

Snijd de basilicumblaadjes grof en de mozzarella in reepjes.

Leg de tortilla's op een met bakpapier beklede bakplaat. Leg op de ene kant van de tortilla's de kip en ui, mozzarella en de helft van het basilicum. Besprenkel met enkele druppels basilicumcrème en vouw de tortilla dicht. Bak de tortillas, bovenin de oven, de laatste 6-8 minuten mee met de tomaten.

Snijd de piadina's doormidden. Leg de piadina's op het bord en serveer met de tomaten. Garneer met het overige basilicum.
