- Preheat the oven to 200°C.
- Dice the eggplant. Cut the Romano pepper into strips.
- Crush or mince the garlic.
- Transfer the naan to a parchment-lined baking sheet and bake in the oven for 2 - 3 minutes.
- Heat a drizzle of olive oil in a large deep frying pan over medium-high heat. Fry the vegetables with the garlic for 6 - 8 minutes.
- Add the Sicilian-style herbs and fry for 1 more minute. Season to taste with salt and pepper.
- Tear the mozzarella into rough pieces and allow to drain.
- In a bowl, combine the passata with the Italian seasoning.
- Spread 2 tbsp of the passata mixture onto each naan. Top with the vegetables and the mozzarella, then season with salt and pepper.
- Bake the naan pizza in the oven for 8 - 10 minutes.
- Cut the tomato into wedges.
- In a salad bowl, combine the white balsamic vinegar with the extra virgin olive oil and the honey.
- Add the arugula and tomato to the salad bowl and toss well to combine with the dressing. Season to taste with salt and pepper.
- Drizzle the naan pizza with the basil crème and serve with the salad alongside.
