Cooking Steps

Snijd de spruiten doormidden.

Besprenkel de biefstukreepjes met ⅓ van de sojasaus. Schil de gember en snijd fijn. Verwijder de buitenste bladeren en de onderkant van de spruiten en snijd doormidden (zie tip). Snijd de radijs in dunne plakken.

Roerbak de biefstukreepjes.

Verhit de roomboter in een wok of hapjespan met deksel en roerbak de biefstukreepjes 1 minuut op hoog vuur. Haal uit de pan, bestrooi met peper en zout en laat afgedekt met aluminiumfolie rusten.

Kook 500 ml water per persoon in een pan met deksel voor de noedels.

Verhit de zonnebloemolie in de wok of hapjespan en bak de gember en spruiten 1 minuut op hoog vuur. Zet het vuur lager, voeg 2 el water per persoon toe en bak, afgedekt, 6 – 8 minuten.

Kook ondertussen de noedels, afgedekt, in 4 minuten gaar. Giet daarna af en spoel af onder koud water.

Voeg de biefstukreepjes toe en roerbak 1 minuut.

Voeg de radijs, overige sojasaus, witte wijnazijn en honing toe aan de wok of hapjespan. Draai het vuur hoog en roerbak 2 minuten. Voeg vervolgens de biefstukreepjes, inclusief het bakvocht, toe en roerbak nog 1 minuut. Breng op smaak met peper en zout.

Verdeel de noedels, spruitjes en biefstukreepjes over de borden.
