Cheesecake? No need for an oven! This recipe takes a different approach, serving all the components in layers. Will you make 4 individual cheesecakes, or serve it all in one big bowl to share? It's delicious either way!

Cooking Steps

Make the filling

  • Zest the lemon.
  • Juice the lemon into a small bowl.
  • Mix the cream, mascarpone and sugar together in a bowl. Beat with an electric whisk until light and fluffy.
  • Carefully mix in 2 tbsp lemon juice and 1 tsp lemon zest.
Slice the strawberries

  • Slice the strawberries and cut the smaller ones in quarters.
  • Grab 4 glasses to assemble the cheesecake in (see Tip).

Tip: if you're having more than 4 people over for dinner, feel free to make the cheesecake in a glass bowl or dish.

Serve

  • Start with a layer of cream, then a layer of speculaas pieces, followed by another layer of cream and then a layer of strawberries.
  • Repeat these steps, finishing with a layer of strawberries. Put the cheesecakes in the fridge to firm up for at least 2 hours.
  • Pull the mint leaves off the stems and finely chop them.
  • Garnish the cheesecake with the mint and the rest of the lemon zest before serving.
