- Boil plenty of water in a pot or saucepan, then add the rice and boil for 10 - 11 minutes. Add the cauliflower rice in the last minute of cooking time, then drain and set aside when done.
- Finely chop the scallions, keeping the white part separate from the greens.
- Cut the cucumber in half and then into crescents. Transfer to a bowl and add the white wine vinegar along with half of the sesame oil. Season with salt and pepper to taste.
- Crush or mince the garlic. Slice the onion into rings.
- Drain the tuna in a sieve. Heat a drizzle of sunflower oil into a deep frying pan over medium-high heat.
- Fry the white part of the scallions, onion and garlic for 1 - 2 minutes.
- Add the curry powder, soy sauce, sambal (see pantry for amounts) and cauliflower rice. Fry for 2 - 4 minutes.
- Heat a drizzle of sunflower oil in another frying pan over medium-high heat and fry the egg.
- Combine the mayonnaise with the tuna in a bowl and season with salt and pepper to taste. Add sambal as preferred.
- Add the rest of the sesame oil to the fried cauliflower rice and season with soy sauce to taste.
- Serve the fried cauliflower rice on deep plates with the tuna on top.
- Serve the cucumber salad on the side.
- Top with the fried egg and scatter over the fried onions and scallion greens.
