- Chop the onion and transfer half to a salad bowl.
- Add the white wine vinegar, the sugar and a pinch of salt, then mix well to combine and set aside.
- Drain the corn and dice the bell pepper.
- Melt a knob of butter in a frying pan over medium high heat. Fry the corn with the bell pepper for 5 - 7 minutes, seasoning with salt and pepper.
- In a bowl, combine the mince with the rest of the onion. Gently pull the bao buns open and spread the mince over one half of the insides.
- Heat a drizzle of sunflower oil in a frying pan over medium-high heat.
- Fry the bao buns face-down for 1 - 2 minutes.
- Flip the bao buns and top with the cheese, then add the water (see pantry for amount).
- Cover with the lid and allow to steam for 2 - 3 minutes.
- In the meantime, prepare the stock in a saucepan over medium heat.
- Add the birria paste to the stock and heat until it starts to boil, then transfer to a bowl for serving.
- Transfer the corn and the bell pepper to the salad bowl, then toss well to combine with the pickled onion.
- Serve the bao buns with the birria sauce (for dipping).
- Serve the salad alongside.
