Cooking Steps

Fry the potatoes

  • Peel or thoroughly wash the potatoes and then slice into rounds of no more than 0.5cm thickness.
  • Heat a drizzle of olive oil in a deep frying pan over medium-high heat and fry the potatoes for 10 minutes, covered. 
  • Remove the lid and fry for a further 10 - 15 minutes, tossing regularly. Season to taste with salt and pepper.
Fry the proteins

  • Slice the onion into half-rings (see Tip).
  • Heat a light drizzle of olive oil in a frying pan over medium-high heat.
  • Fry the onion and the bacon lardons for 3 minutes.
  • Add the meatballs and use a spatula to flatten them into mini burgers, then fry for 6 minutes.

Tip: if preferred, set aside some of the raw onion for the salad in step 3.

Make the salad

  • Finely chop the pickles.
  • In a small bowl, combine the tomato paste with the mayonnaise, the mustard and half of the pickles. Season to taste with salt and pepper.
  • Finely chop the lettuce and halve the tomatoes.
  • Transfer both to a salad bowl and drizzle with the extra virgin olive oil. Season to taste with salt and pepper, then toss well to combine.
Serve

  • Top the mini burgers with the cheese and fry for 1 minute, covered, so as to allow the cheese to melt.
  • Serve the salad and the potatoes on deep plates, topped with the bacon, the fried onion and the mini cheeseburgers. 
  • Drizzle with the special sauce.
  • Garnish with the sesame seeds and the rest of the pickles.
