Cooking Steps

Prepare

  • Chop the onion and quarter the cabbage.
  • Heat a drizzle of olive oil in a large frying pan over high heat. Fry the cabbage for 2 - 3 minutes per side.
  • Add the chorizo and the onion, then fry for 4 - 5 minutes over medium-high heat.
  • Add a splash of water, then braise for 4 - 5 minutes over low heat until soft, covered. Season to taste with salt and pepper.
Fry the chicken

  • Meanwhile, dice the tomato and crush or mince the garlic.
  • Heat a drizzle of olive oil in a frying pan over medium-high heat.
  • Fry the chicken with the tomato, the garlic, and the piri-piri seasoning* for 7 minutes.
  • In a bowl, combine the mayonnaise with the garlic & herb seasoning.

*Take care, this ingredient is spicy! Use as preferred.

Steam the bao buns

  • Boil a shallow layer of water in a pot or saucepan (see Tip).
  • Line a sieve with a sheet of parchment paper and place it over the pan, taking care to ensure it doesn't touch the water.
  • Transfer the bao buns to the sieve and cover with the lid, then allow to steam for 5 - 7 minutes or until soft.

Tip: if you have a steamer, use this instead of the sieve.

  • Spread the bao buns with the garlic sauce and then fill with the chicken.
  • Serve the cabbage and the chorizo alongside.
