Cooking Steps

Boil the rice

  • Boil plenty of salted water in a pot or saucepan.
  • Cook the rice for 10 - 12 minutes or until done, then drain and return to the pot.
Fry the vegetables

  • Heat a drizzle of sunflower oil in a deep frying pan over medium-high heat and fry the vegetable mix for 3 minutes, covered.
  • Meanwhile, dice the bell pepper and the tomato.
  • Transfer the bell pepper to the vegetables and fry for 5 more minutes.
  • Add the tomato, the tomato paste and the African-style spices, then fry for 1 more minute.
Make the curry

  • Drain the beans and transfer to the vegetables.
  • Add the coconut milk and bring to the boil, then allow to simmer until serving. Season to taste with salt and pepper (see Tip).
  • In the meantime, zest the lime and cut it into quarters.
  • Finely chop the fresh herbs.

Tip: if preferred, you can also add some sambal to make the curry spicier.

Serve

  • Stir the lime zest into the rice.
  • Serve the rice on deep plates and top with the curry.
  • Garnish with the fresh herbs and the crispy onions.
  • Serve with the lime wedges alongside.
