Cooking Steps

Krieltjes bereiden

Halveer eventuele grote krieltjes en laat de rest heel. Zorg dat de krieltjes net onder water staan in een pan met deksel, verkruimel het bouillonblokje erboven en kook de krieltjes 16 - 18 minuten. Giet daarna af.Snijd de rode ui in halve ringen.Wrijf de varkenshaas in met peper en zout.

Varkenshaas bakken

Verhit 1 el roomboter per persoon in een koekenpan met deksel. Bak de varkenshaas met de rode ui 2 - 3 minuten per kant op middelhoog vuur. Dek de pan af en bak nog 5 - 6 minuten op middelmatig vuur. Haal de varkenshaas daarna uit de pan en verpak in aluminiumfolie. Laat rusten tot het serveren.Blus de ui af met zwarte balsamicoazijn en laat nog 1 - 2 minuten al roerend inkoken.

Groenten snijden

Snijd de voorgekookte rode biet in hapklare stukjes. Verwijder het klokhuis van de peer en snijd in parten.Verhit de overige roomboter in een andere koekenpan en bak de parten peer 1 - 2 minuten per kant op middelhoog vuur.

Meng in een saladekom de mosterd, honing, wittewijnazijn en extra vierge olijfolie met peper en zout tot een dressing.Voeg de gemengde sla, rode biet en walnoot toe aan de saladekom, meng goed en breng eventueel verder op smaak met peper en zout.Verdeel de salade, krieltjes en varkenshaas over de borden. Schep de ui bij de varkenshaas. Garneer de salade met de peer.
