Voorbereiden

Verwarm de oven voor op 200 graden. Snijd de rode ui in dunne halve ringen. Kluts de eieren in een kom en breng op smaak met peper en zout.

Bakken

Verhit 1/4 el zonnebloemolie per persoon in een hapjespan of grote koekenpan op middelhoog vuur en bak de paprikareepjes met helft van de rode ui 2 - 3 minuten. Voeg het kipgehakt toe en bak in 4 - 5 minuten los. Voeg het eimengsel toe en laat al roerend stollen. Voeg de geraspte cheddar toe en laat smelten. Houd warm op laag vuur tot serveren.

Wikkel de tortillas in aluminiumfolie en verhit 2 - 3 minuten in de oven. Snijd de tomaat in blokjes.

Tip: Deze maaltijd is calorierijk. Let jij op je calorie-inname? Beleg dan 1 tortilla per persoon en gebruik de overige tortilla's voor lunch de volgende dag.

Serveren

Verdeel de tomaat en de overige ui over aparte kommetjes. Besmeer de tortillas met de zure room, avocadodip en verdeel het ei-kipgehaktmengsel erover. Beleg met de overige ingrediënten naar keuze en rol de burrito dicht.

Tip: Ei is, naast vette vis, een van de weinige ingrediënten die rijk zijn aan vitamine D. Deze vitamine krijgen veel mensen te weinig binnen, zeker in de winter met weinig zon.
