- Boil plenty of water in a pot or saucepan for the smoked sausage.
- Take the sausage out of its packaging and transfer to the water. Allow to stand for 10 minutes over low heat.
- In a salad bowl, combine the extra virgin olive oil with the balsamic vinegar, then season to taste with salt and pepper.
- Dice the cucumber.
- Peel and dice the orange.
- Roughly chop or tear the lettuce directly into the salad bowl.
- Add the cucumber and orange, then toss well to combine with the dressing.

- Slice the onion into half rings.
- Melt a small knob of butter in a frying pan over medium-high heat and fry the onion for 2 - 3 minutes.
- In a small bowl, combine the mayonnaise with the honey and the mustard, then season to taste with salt and pepper.
- Halve the sausage lengthways.
- Cut open the hotdog bun and spread both sides with the honey mustard sauce.
- Top with the sausage, onion and pickles.
- Garnish with the crispy onions and serve the salad alongside.
