- Weigh the rice and boil plenty of water in a pot or saucepan.
- Cook the rice for 10 - 11 minutes, then add the cauliflower rice and boil for 1 more minute. Drain and set aside.
- Chop the onion and dice the carrot.
- Heat a drizzle of olive oil in a large frying pan over medium-high heat and fry the onion for 1 - 2 minutes.

- Add the carrot and the Korean-style spices, then fry for 6 - 8 more minutes.
- Gradually add the spinach. Allow it to wilt and reduce, covered if necessary, then add some soy sauce as preferred.
- Heat a light drizzle of olive oil in a large frying pan over medium-high heat. Fry the mince for 3 - 4 minutes, separating it as you do so.
- Add the sambal to the mince and mix well to combine.
- Move the mince to one side of the pan and fry the egg on the other side.
- Season the egg with salt and pepper.
- In a small bowl, combine the kimchi sauce* with the soy sauce.
*Take care, this ingredient is spicy! Use as preferred.
- Season the rice with salt and pepper, then serve on deep plates.
- Top with the vegetables, the mince and the egg.
- Garnish the egg with the sesame seeds.
- Drizzle everything with the kimchi dressing.
