Verwarm de oven voor op 180 graden. Verhit 1/2 el roomboter per persoon in een hapjespan met deksel op middelmatig vuur. Bak de gesneden rode ui 1 - 2 minuten. Voeg de spinazie hand voor hand toe en laat slinken. Breng op smaak met peper en zout.

Eieren bakken

Voeg de eieren, kruidenroomkaas en 1/4 zakje Midden-Oosterse kruidenmix per persoon toe aan een kom. Breng op smaak met peper en zout en meng met een garde door elkaar. Giet het eimengsel over de spinazie in de hapjespan. Roer kort en laat in 1 - 2 minuten stollen. Verlaag het vuur en laat, afgedekt, nog 4 - 6 minuten garen. Bak het Turkse broodje 6 - 8 minuten in de oven.

Salade maken

Snijd ondertussen de komkommer in blokjes en de tomaat in parten. Maak in een saladekom een dressing van per persoon: 1/2 el extra vierge olijfolie, 1 tl zwarte balsamicoazijn, 3/4 tl oregano, peper en zout. Voeg de tomaat, komkommer en olijven toe aan de saladekom en schep goed om. Verkruimel de witte kaas boven de salade.

Verdeel de spinazie-omelet in stukken. Snijd het Turkse broodje open en beleg elke helft met een stuk omelet. Verdeel de broodjes over de borden en serveer met de Griekse salade.
