Verwarm de oven voor op 200 graden. Meng in een kom de varkenshaaspuntjes met de helft van de Mexicaanse kruiden en 1/2 el olijfolie per persoon. Laat de mais en zwarte bonen samen uitlekken in een zeef of vergiet.

Groente snijden

Snijd de avocado doormidden, verwijder pit en schil en snijd het vruchtvlees in plakken. Snijd de rode puntpaprika in dunne ringen. Breek de taco's in stukken en verdeel ze over een bakplaat met bakpapier. Bak 4 - 5 minuten in de oven.

Verhit een koekenpan op middelhoog vuur en bak de varkenshaaspuntjes met de kruiden en de olie 2 - 4 minuten aan. Meng ondertussen in een grote kom de zure room met 1/2 el extra vierge olijfolie per persoon en de rest van de Mexicaanse kruiden. Breng de dressing op smaak met peper en zout.

Meng de dressing met de mesclun, zwarte bonen, mais en puntpaprika. Verdeel de salade over de borden en leg hier de varkenshaaspuntjes en avocado op. Serveer de tacochips erbij.
