Cooking Steps

Prepare

  • Take the steak out of the fridge and allow it to reach room temperature.
  • Chop the onion and slice the eggplant into crescents.
  • Heat a drizzle of olive oil in a frying pan over medium-high heat. Fry the eggplant and the onion for 7 - 8 minutes, covered.
  • Add the Sicilian-style herbs and fry for 1 more minute (see Tip).

Tip: add more oil if necessary.

Fry the steak

  • Heat a light drizzle of olive oil in a frying pan over medium-high heat. When the pan is nice and hot, fry the steak for 1 - 3 minutes per side, or until cooked as preferred.
  • Remove from the pan and season with pepper, then allow to rest under aluminum foil.
  • Meanwhile, dice the bread roll. 
  • Crush or mince the garlic.
Make the croutons

  • Heat a light drizzle of olive oil in the same pan over medium-high heat.
  • Fry the bread with half the garlic for 4 - 6 minutes, so as to make croutons. Season to taste with salt and pepper.
  • In a salad bowl, combine the extra virgin olive oil with the balsamic vinegar, the basil crème and the rest of the garlic.
  • Season to taste with salt and pepper.
Serve

  • Roughly chop the lettuce and transfer to the salad bowl. Add the croutons, then toss well to combine with the dressing.
  • Slice the steak against the grain.
  • Serve the salad, the eggplant and the steak on deep plates.
  • Garnish with the cheese to finish.
