Cooking Steps

Aardappelschijfjes koken

Verwarm de oven voor op 200 graden. Schil of was de aardappelen (nicola) grondig en snijd in plakken van ½ cm. Verdeel over een bakplaat met bakpapier, besprenkel met de zonnebloemolie en breng op smaak met peper en zout. Bak de aardappelen 30 – 35 minuten in de oven, of tot ze goudbruin kleuren.

Verwijder ondertussen de steelaanzet van de sperziebonen en snijd de bonen in 2 gelijke stukken. Schenk een bodempje water in een pan met deksel. Voeg een snufje zout en de sperziebonen toe. Breng afgedekt aan de kook en laat 9 – 11 minuten zachtjes koken. Giet daarna af en laat zonder deksel uitstomen. Roer naar smaak een klein deel van de roomboter door de boontjes. Breng op smaak met peper en zout.

Leg ondertussen de plakjes ontbijtspek zo naast elkaar dat ze elkaar in de lengte net overlappen. Leg de schelvis overdwars op de plakjes en wikkel de schelvis in het ontbijtspek.

Verhit de overige roomboter in een koekenpan en bak de in spek gewikkelde vis 2 – 3 minuten per kant op middelhoog vuur, of totdat hij gaar is. Breng op smaak met peper.

Nootmuskaat raspen

Rasp ondertussen de nootmuskaat met een fijne rasp. Let op: je hebt er maar een snufje van nodig.

Serveren

Serveer de in spek gewikkelde schelvis met de aardappelschijfjes en sperziebonen. Bestrooi de sperziebonen met nootmuskaat naar smaak en serveer met de ravigotesaus.
