- Preheat the oven to 200°C.
- Chop the onion and crush or mince the garlic.
- Heat a drizzle of olive oil in a deep frying pan over medium-high heat.
- Fry the mince for 3 minutes, then remove from the pan and set aside.
- In the same pan, fry the onion and garlic with the Italian herbs for 2 - 3 minutes.
- Deglaze with the passata, balsamic vinegar and the water (see Tip).
- Season with salt and pepper, then cover with the lid and allow to simmer for 5 - 6 minutes.
- In the meantime, slice the courgette and tear the mozzarella into chunks.
Tip: if you'd prefer more sauce on the pizzas, just double the amount of water.
- Transfer the flatbreads to a parchment-lined baking sheet.
- Spread with the tomato sauce, then top with the mince, courgette and mozzarella.
- Bake the pizzas in the oven for 7 - 8 minutes. In the meantime, pull the basil leaves off the stems and cut them into ribbons.
- Serve the pizzas on plates and garnish with the fresh basil.
- Drizzle over some extra virgin olive oil as preferred.
