Snijd de kastanjechampignons in plakken.

Snipper de rode ui. Verwijder de zaadlijsten van de rode peper en snijd fijn. Snijd de kastanjechampignons in plakken. Snijd de paksoi klein en houd het witte deel apart van de groene bladeren.

Voeg de witte delen van de paksoi toe.

Verhit de zonnebloemolie in een wok of hapjespan en fruit de rode ui en rode peper 3 minuten op laag vuur. Voeg de kastanjechampignons toe en roerbak 3 minuten op middelhoog vuur. Voeg de witte delen van de paksoi toe en roerbak 2 minuten.

Roerbak de noedels.

Voeg vervolgens de udonnoedels, sojasaus, witte wijnazijn, honing en 50 ml water per persoon toe en roerbak 2 minuten.

Voeg tenslotte de groene bladeren van de paksoi en de helft van de notenmix toe en roerbak nog 1 minuut. Breng op smaak met peper en eventueel zout.

Garneer met de overige notenmix.

Verdeel het gerecht over de borden en garneer met de overige notenmix.
