• Breng ruim water aan de kook in een pan met deksel voorde rijst. • Kook de rijst, afgedekt, 10 - 12 minuten. Giet daarna af enlaat zonder deksel uitstomen. • Verhit ondertussen de zonnebloemolie in een wok op middelhoog vuur. Voeg de groentemix toe en bak 6 – 8 minuten. Schep regelmatig op

• Snijd ondertussen de limoen in parten en snijd de lente-ui in dunne ringen. • Hak de verse koriander grof. • Voeg de gemalen koriander, de kurkuma en de helft van de lente-ui en de helft van de verse koriander toe aan de wok en bak nog 2 – 3 minuten.

• Verhit de olijfolie in een koekenpan en bak 2 spiegeleieren per persoon. • Voeg de rijst toe aan de groenten en schep om. • Voeg de ketjap, de sambal en sojasaus naar smaak toe en roerbak 2 – 3 minuten.

• Serveer de nasi goreng met het spiegelei. • Garneer met de limoen, de overige koriander en lente-ui en de gezouten pinda's.
