Cooking Steps

  • Verwarm de oven voor op 200 graden. 
  • Halveer de avocado en verwijder de pit en schil.
  • Prak het vruchtvlees in een kleine kom samen met de citroenmayonaise. 
  • Breng op smaak met peper en zout.

  • Snijd het brood in de lengte doormidden en besprenkel met de olijfolie.
  • Leg op een met bakplaat met bakpapier bak 5 - 7 minuten in de oven.

  • Kook ruim water in een grote pan. Voeg de wittewijnazijn toe zodra het water kookt. Breek de eieren in aparte glazen.
  • Roer het water zodat je een draaikolk ontstaat. Laat voorzichtig één ei per keer in het water vallen en zet het vuur laag.
  • Kook gedurende 2 - 3 minuten, of tot het eiwit gestold is. Haal de eieren voorzichtig met een schuimspaan uit de pan.
  • Laat ze rusten op een bord met keukenpapier.

  • Leg de toast op borden en verdeel de avocado er overheen. 
  • Beleg met de gerookte zalm en de gepocheerde eieren. 
  • Garneer met de tuinkers.
  • Breng op smaak met extra peper.
