Cooking Steps

Voorbereiden

  • Bereid de bouillon in een grote soeppan met deksel.
  • Voeg de spliterwten en het laurierblad toe.
  • Laat de soep, afgedekt, 20 minuten zachtjes koken op middellaag vuur. Roer regelmatig door.
Snijden

  • Snijd de wortel in schijfjes van 1 cm dik. Was of schil de aardappelen en snijd in blokjes van 2 cm.
  • Bewaar een paar bladselderijblaadjes apart en hak de rest, inclusief steeltjes, grof.
  • Snijd de prei in ringen.
  • Snijd de ui in halve ringen.
Soep afmaken

  • Voeg de wortel, aardappelen, gesneden bladselderij, knolselderij, prei en ui toe en kook nog 20 minuten op laag vuur, of tot de groenten gaar zijn. Haal de rookworst uit de verpakking en kook de laatste 7 minuten mee.
  • Haal het laurierblad en de rookworst uit de soep.
  • Stamp de soep een paar keer door met een aardappelstamper.

Weetje: Wist je dat knolselderij meer vezels bevat dan de meeste andere groenten? Namelijk maar liefst 4,9 gram vezels per 100 gram! Vezels zijn belangrijk voor een goede darmwerking en zorgen voor een langdurig verzadigd gevoel na de maaltijd.

  • Snijd de rookworst in plakken en voeg toe aan de soep (zie Tip). 
  • Verhoog het vuur en roer de soep goed door.
  • Breng op smaak met peper en zout.
  • Verdeel de soep over de kommen en garneer met het apart gehouden bladselderij.

Tip: Deze maaltijd is calorierijk. Let jij op je calorie-inname? Gebruik dan de helft van de rookworst. De overige rookworst kun je de volgende dag bijvoorbeeld in een lunchsalade verwerken of je boterham mee garneren.
