- Slice the Cypriot-style cheese into slabs of 0.5cm thickness (see Tip).
- Heat a drizzle of olive oil in a frying pan over medium-high heat. Fry the cheese with the smoked paprika for 2 minutes per side.
Health Tip: if you're watching your salt intake, use just half of the cheese and keep the rest to use another time.
- Slice the onion into half rings, then add it to the pan and fry alongside until the cheese is done.
- Stir in the honey, the sweet chili sauce and half of the white wine vinegar. Season to taste with salt and pepper, then fry for 1 more minute per side.
- In a large bowl, combine the red cabbage with the rest of the white wine vinegar. Season to taste with salt and pepper.
- Pierce several holes in the flatbread packaging and microwave on high for 1 minute (see Tip).
- Slice the cucumber into crescents.
- Roughly chop the fresh herbs.
Health Tip: if you're watching your calorie intake, serve just half of the flatbread. You can use the rest another time.
- In a small bowl, combine the mayonnaise with the paprika and the water for the sauce (see pantry for amount).
- Fill the flatbreads with the lettuce, red cabbage, cucumber, cheese and onion.
- Drizzle with the paprika mayonnaise.
- Garnish with the fresh herbs and the za'atar to finish.
