Thaise kinderen eten al op jonge leeftijd pittige garnalen. Wij beginnen eerder met kibbeling, andere witvis of een garnalenkroketje. Deze curry is daarom zacht en romig gemaakt. Voor extra pit zit er shiso cress bij, wat je naar smaak kunt toevoegen. Shiso cress is een culinaire topper. De smaak heeft iets van komijn en kun je heel goed gebruiken als decoratie.

Cooking Steps

Voorbereiden

Kook 250 ml water per persoon in een pan met deksel voor de rijst. Snijd de peen in kleine blokjes en snijd de spitskool fijn. Knip de shiso cress los.

Rijst koken

Kook de rijst, afgedekt, 12 - 15 minuten in de pan met deksel. Giet daarna, als het nodig is, af en laat zonder deksel uitstomen en breng op smaak met peper en zout.

Groenten bakken

Verhit ondertussen de helft van de zonnebloemolie in een wok of hapjespan met deksel en bak de peen 2 minuten op hoog vuur. Voeg de spitskool toe en bak nog 4 - 6 minuten. Houd je niet van knapperige groenten, bak ze dan wat langer.

Op smaak brengen

Meng de kokosmelk met de aangegeven hoeveelheid groene currypasta en voeg deze toe aan de groenten. Laat afgedekt 5 minuten zachtjes koken en breng op smaak met peper en zout. Houd je van pittig eten? Verhoog dan de hoeveelheid currypasta of serveer de overige currypasta aan tafel, zodat je zelf nog wat toe kunt voegen.

Garnalen bakken

Verhit ondertussen de overige zonnebloemolie in een koekenpan, bak de garnalen aan beide kanten 2 minuten op hoog vuur en bewaar de pan met het bakvocht.

Serveren

Schenk het bakvocht van de garnalen over de rijst en serveer met de curry in een diep bord. Garneer met de gebakken garnalen en de shiso cress.
