- Preheat the oven to 200°C.
- Slice half of the onion into thin half-rings and finely chop the rest.
- Peel or thoroughly wash the sweet potato.
- Use a peeler or cheese slicer to shave the sweet potato and courgette into thin round slices.
- Heat a light drizzle of olive oil in a frying pan over medium-high heat.
- Fry the onion rings with the sweet potato for 4 - 6 minutes.
- Add the courgette and the Hello Buon Appetito during the final minute of cooking. Season to taste with salt and pepper.
- Transfer the naan to a parchment-lined baking sheet. Top each naan with 2 tbsp passata and season with salt and pepper.
- Bake the naan in the oven for 2 minutes.
- Top with the fried vegetables (see Tip).
- Crumble over the goat's cheese and drizzle over some of the basil créme.
- Return to the oven for 4 - 6 more minutes.
Tip: if you have leftover toppings, cut them into smaller pieces and add to the salad.
- In the meantime, halve the cherry tomatoes and transfer to a salad bowl, along with the rest of the onion.
- Add the white balsamic vinegar and the rest of the basil crème, along with extra virgin olive oil if preferred. Season to taste with salt and pepper, then toss well to combine.
- Slice the naan pizza and serve with the salad alongside.
