Cooking Steps

Breng per persoon: 400 ml water met 1 bouillonblokje aan de kook in een steelpan met deksel (zie Tip). Snijd de kippendij op twee plekken in. Voeg de kippendij, tijmtakjes en het laurierblad toe aan de bouillon en laat, afgedekt, 10 - 12 minuten zachtjes koken, of tot de kip gaar is. Haal de kip met een schuimspaan uit de bouillon en laat afkoelen. Bewaar de bouillon.

Tip: Let jij op je zout-inname? Gebruik dan 1/2 bouillonblokje voor 400 ml water.

Snijden

Snipper ondertussen de ui. Pers de knoflook of snijd fijn. Snijd de bleekselderij in halve maantjes. Snijd de krulpeterselie fijn. Was de aardappelen grondig en snijd in grove stukken.

Weetje: Bleekselderij lijkt behalve water weinig te bevatten, maar niets is minder waar. Deze groente zit bomvol vezels, vitamine A en C en calcium!

Julienne snijden

Snijd de wortel en de prei in lange, zeer dunne reepjes (zoals lucifers) (zie Tip).

Tip: Deze snijtechniek wordt ook wel 'julienne' genoemd. Je snijdt deze reepjes het makkelijkst door de groenten eerst in stukken van 4 cm te snijden. Snijd daarna in de lengte in dunne plakken en dan in reepjes van 3 mm breed.

Waterzooi bereiden

Verhit 1 el roomboter per persoon in een soeppan met deksel op middelhoog vuur. Voeg de ui en knoflook toe en fruit 1 - 2 minuten. Voeg daarna de prei, wortel, bleekselderij, aardappelen, 1/2 el wittewijnazijn per persoon en de bouillon toe. Breng aan de kook en laat, afgedekt, 5 minuten koken.

Kip toevoegen

Trek met twee vorken het vlees van de kippendij. Voeg het kippenvlees en de kookroom toe aan de bouillon. Laat nog 8 - 10 minuten zachtjes koken, of tot de aardappelen gaar zijn. Breng op smaak met peper en zout.

Serveren

Verdeel de Gentse waterzooi over kommen of diepe borden. Garneer met de krulpeterselie.
